Quick, Easy & Fun Mexican Dinner Dishes

Everyone is so busy nowadays and always on the go that preparing a sumptuous meal for dinner is very hard to do. Now, worry no more as we will give you some quick, easy and fun Mexican dish ideas for busy nights.

Border-Style Shrimp

Enjoy your favorite seafood with yellow rice in just 15 minutes.

Ingredients:

Cooking spray

1 1/2 cups Chopped White Onion

1 TSP Crushed Cumin

1 TSP Chili Powder

1 1/2 Pounds Skinned and Deveined Medium Shrimp

2 Minced Garlic Cloves

2 TBSP Butter

1/2 TSP Salt

1/8 TSP Hot Pepper Sauce

1/4 Cup Fresh Lime Juice

1/4 Cup Chopped Green Onions

Lime Wedges (Optional)

Procedure:

Put a large nonstick skillet topped with cooking spray over medium-high heat

Sauté onion for 3 minutes

Add cumin, chili powder, shrimp and garlic and cook for another 4 minutes

Remove from heat; add butter, salt, hot sauce and stir until even

Blend in juice and green onions add lime wedges if desired.

 

Easy Barbecue Tostadas

Grab your favorite chicken or pork and make another delicious dish in just 30 minutes.

Ingredients:

10 Tostada Shells

1 Can Refried Beans

2 Pounds Shredded Barbecued Pork or Chicken

Mole Barbecue Sauce

Chipotle Sour Cream

Jicama Slaw

Procedure:

Spread refried beans over tostada shells and add shredded pork or chicken barbecue

Add on Mole Barbecue Sauce, Chipotle Sour Cream, and Jicama Slaw and then serve!

Smoky Steak Fajitas

Give your fajitas a little twist with onion and bell pepper in just 30 minutes.

Ingredients:

2 TSP Smoked Paprika

2 TSP Dried Oregano

1 1/2 TSP Garlic Powder

1 1/2 TSP Crushed Cumin

1 TSP Brown Sugar

1/4 TSP Kosher Salt

1/4 TSP Ground Black Pepper

1/8 TSP Ground Red Pepper

1 Pound Trimmed Flank Steak

Cooking Spray

1 1/4-Inch Sliced Small Red Onion

1 1/2-Inch Sliced Small Red Bell Pepper

1 1/2-Inch Sliced Small Yellow Bell Pepper

8 Corn Tortillas

1/4 Cup Chopped Cilantro

8 Lime Wedges (Optional)

Procedure:

Mix paprika, oregano, garlic powder, cumin, brown sugar, salt, black pepper, and red pepper in a small bowl

Run 2 TBS of the mixture over steak

Put a grill pan coated with cooking spray over medium-high heat

Grill the steak for 5 minutes on each side 

Transfer the steak to the cutting board and let stand for 10 minutes and then cut

Combine the remaining spice mixture with onion and bell peppers.

Put on the pan grill and remove when cooked

Grill tortillas on the pan until lightly brown

Put on the steak and bell pepper mixture over tortillas. Add chopped cilantro and serve with lime wedges if desired.
