As for what covenants you can join, for Brotherhood of Blood, you'll want to talk to Titchy Gren in Undead Purgatory while you have Token of Spite, according to Segment Next. He'll be next to the bonfire, and all you have to do is say "yes" to his dialogue.

Most importantly: accept the fact that your character will die many times.
