The highly-popular and gastronomically diverse enchilada is best known as a maize tortilla dish consisting of meat, sliced onion, chilli sauce and cheese. However, vegetarians can forego the meat part completely, and still have an authentic and delicious Latin-American snack. Here are some vegetarian enchilada recipes you can easily try at home:

1. Sweet Potato and Tofu Enchiladas with Mole Sauce from Oh My Veggies

Homemade mole sauce is used to cook the corn tortillas, which are rolled and stuffed with sweet potato, tofu, minced garlic, cumin, chopped cilantro, queso fresco and Monterey Jack cheese. The dish only takes 20 minutes to heat, like most on this list. Extra flavor can be added by garnishing the baked enchiladas with the remaining cheese and cilantro leaves.

2. Enchiladas with Fresh Mango Salsa from Better Homes and Gardens

This enchilada variation can be made with either flour or corn tortillas. Its filling includes onions, garlic, jalapeno peppers, tofu and cheese. All that splashed with mole sauce, sour cream and a little bit of water. The filled enchiladas are then soaked in a mushy sauce consisting of flour, milk, cumin, salt and sour cream before heating.
